The Butternut is the most popular and well known of the winter squashes and part of the pumpkin family. The difference between the Winter and Summer Squashes are that they are harvested and eaten when the fruit is in it�s most mature stage, the seeds have matured fully and the skin has hardened into a tough rind. The grouping of seasons can be confusing as you can find �Summer� squash on sale during the winter and �Winter� squash on sale during the summer, autumn & winter months. Winter vegetables that would keep until at least December became known as �Winter� vegetables.
You can expect to find the Winter squash to be round and long, scalloped and pear-shaped having flesh that spans from bright orange to deep yellow. Most are of the vine variety and the fruit has to be fully matured before harvesting. The fruit can take anything up to 3 months to mature and is expected to be harvested once Autumn has arrived.
